Shirley I hope you will perfect this siopao in your first try. We got this recipe from Maya Cook Fest in Phil that was way back when we were in Brunei in the 80's And to all our batchmates and classmates who wish to try this, good luck. This is really yummy. I show a lot cooking demo of this siopao when we were in Bahrain too.
SIOPAO ( Dough)
A) Ingredients:
mix all the ingredient in a warm bowl or cup
1 package of yeast (8 gr Fleischmanns) or 2 1/4 tsp yeast equivalent
one half tsp sugar one half cup of warm water
Shirley I said warm bowl kasi ayw mabuhay ang yeast masyado kasing malamig sa atin. Water should be warmer than lukewarm. Pero sa Pinas mainit ang weather kaya puede na ang lukewarm.
B) Ingredients:
In separate mixing bowl mix (Big mixing bowl) put
2 eggs
one half cup cooking oil 1 cup cold water
three fourth cup sugar
one half tsp of salt
C) Ingredient:
5 cups of all purpose flour (use Robin Hood Flour) Sa Pinas hindi ko alam ang magandang klase ng flour. Anyway use all purpose.
Procedure:
1. Mix all the A's ingredients. Let it stand for 10-15 minutes until it become frothy. Pag walang bula don't used it hindi buhay hindi aalsa ang inyong dough. Sayang lang
2. While waiting for the yeast mixture, Beat eggs and oil,then add one cup of cold water,3/4 cup of sugar and half tsp of salt (B ingredients)
Mix it well. Then put the A's ingredients to B's ingredients.
3. Add flour gradually to the mixture. Knead till smooth. Get more flour while kneading so it won't stick to your hand.
4. Let it rise till double in size about 2 hours or 1 1/2 hour. I usually cover it and put inside my pantry or inside the oven
SIOPAO (Filling)
3 lbs chicken cut into cube or how you like it (you can used pork or beef too)
1/2 cup soy sauce
3/4 cup sugar
1/2 tsp of salt ( optional ) according to taste
1 big onion slice thinly
1 tbsp of cooking oil
3 tbsps of corstarch plus littlle water to mix it.
Saute the onion in oil, cook it well till transparent in color. Then add the chicken meat. Cook it well too. Then add the soy sauce, sugar and salt. Carefull of the salt. Some soy sauce are very salty than normal one. I Used the Lee Kum Kee which is a little bit sweet than our Marca Pina. Add cornstarch lastly make it very very sticky. Let it cool or put it in fridge. I usually made the filling a night before so it will be nice to put into the dough.
Boils 5 eggs and cut it into 8 pcs. or if you want bigger cut into quarters. Cut wax papers or parchment (tama ba spelling ko?) paper
This one recipe can make about 20 - 25 siopao .
Then put 1 tbsp of chicken filling to the dough. Let stand for about an hour before you steam it. 20 minutes maximum. Enjoy......... Email me agad if successful.
Shirley wala na palang sauce yan dahil kasama na dyan sa filling kaya dapat mong ilagay sa fridge para maging buo siya at madali ilagay sa dough. Kaya pag na steam mo na saka siya magiging moist inside.

Tita I tried to used red bean paste na nabibili sa Chinese store para iba ang lasa kaya stick na lang ako sa meat filling na siopao. Andyan na I post my siopao recipe. Enjoy

Genia it good your interested on my blood abnormalities. Hindi naman ito masakit but lagi mababa ang aking production ng red blood cells and hemoglobins, lagi akong feel dizzy at lazy. Hereditary daw at walang gamot. Tama ka my skin color was pale, fatigue all the time and my memory is always cloudy. The doctor suggest to me to have a hemoglobanoapathy ( I don't know if I get the right spelling for that) that a lab test for thalassimia. I used to take ferrous sulfate for iron supplement but one doctor told me not take it anymore dahil nga daw may thalassimia ako. I don't know which one to follow. They said that there's no treatment for that and always eat more red meat which I really don't like. They said its very common to Asians and the people in Middle East. Inshaallah.

Chit talagang may shortage kami ng manpower dito sa Canada specifically Province of Alberta. Marami pumunta riyan sa atin to recruit as contract workers but after 2 years they will turn your visas to permanent resident or immigrant status na. kung may makita ako rito info about recruitment ipadala ko agad sa atin yahoogroups para maka apply kayo o ang mga anak nyo.
